Cassava Flour Tortillas

Since going gluten free, there are a few things that I really miss having around. One thing I miss is flour tortillas. They are versatile, easy, and delicious. While these tortillas are not as quick as opening up a bag, they are fairly simple to make and delicious!

Here's the recipe:

Cassava Flour Tortillas

1 1/2 cups of cassava flour

1/2 tsp salt

1/4 cup olive oil

1 cup of water (more if needed)

Mix together and kneed until a dough is formed. If it's too dry, add more water (too sticky add more flour). Roll into balls and put into tortilla press or use a rolling pin to flatten the balls into tortillas..
