My kids LOVE anything with chocolate, can't imagine where they get that from....
One of my mommy goals is to make healthy food taste good! I want my kids to eat real food, and like it! I have been making some variation of these popsicles for years and they are definitely a house favorite.
These pops are super easy to make. They whip up, well blend up rather, in no time! The hardest part is waiting for these babies to freeze! You can eat them just as they are, and they are delicious, or if you have the time, you can make a quick chocolate shell to dunk them in. If you go that route, you have the added benefit of making them pretty with toppings.
Peanut Butter Banana Popsicles
2 or 3 bananas (depending on size)
1 cup of milk of choice ( I used cashew milk to keep them dairy free)
1/4 cup of peanut butter (could substitute with almond butter)
2 tbsp cocoa powder
1/4 tsp vanilla
Blend all of the ingredients together, pour into popsicle molds and freeze for a few hours. That's it!
Chocolate shell
1/4 cup coconut oil
1/8 cup honey
1/4 cup cocoa powder
1/2 tsp vanilla extract
In a small sauce pan, on low heat, melt together the coconut oil and honey. Whisk in the cocoa powder, once fully incorporated, remove from heat and add vanilla extract. Dunk the frozen popsicles in the chocolate, and it will freeze right away, so add your toppings fast!
Topping suggestions:
*unsweetened coconut flakes
*crushed nuts
*sea salt
*or you can drizzle the chocolate instead of dunking
Enjoy!
