Rainbow Unicorn Popsicles



My youngest turned six last week and wanted a rainbow unicorn party, since she has a Summer birthday, I knew popsicles had to be included in the menu. These popsicles are quite literally, nature's candy. The layers are filled with all kinds of fruit and even a vegetable....but no one knew....


Also, I used full-fat plain yogurt, you don't need sweetened, that's what the banana is for! These are completely sugar free, except the sugars that are naturally in the fruit, and full of nutrient rich ingredients.


They were a little time consuming because each color required it's own blending and it's own bowl...so the clean up was more than I would normally do, but they were so worth it!



Rainbow Popsicles

Red layer - 1/4 cup strawberries, 1 half banana, and 1/4 cup yogurt

Orange layer - 1/4 cup mango, 1 half banana, and raspberries and 1/4 cup yogurt

Yellow layer - 1/4 cup pineapple and mango, 1 half banana and 1/4 cup yogurt

Green layer - 1 whole banana and a handful of spinach

Blue layer - I tried....couldn't quite get it blue enough, but I used blueberries

Purple layer - 1/4 cup blackberries and 1 half banana

Blend each mixture separately and put in a bowl. Layer about a couple of spoonfuls of each color at a time, freeze for at least three hours and enjoy!!!
