Grain Free Pasta with Sausage and Kale



I come from an Italian family, and we love to cook! Growing up pasta was a weekly staple in our house. My grandma lived with us my last few years of living at home, and she passed on a love of food and cooking to me that I am forever grateful for.


A few years ago, because of some health issues, we had to do a complete overhaul on our diet. I've always loved to cook from scratch, to create something that excites our sense of smell and taste. It has always been important to me to add in as many vegetables and pack in as many nutrients as I can into my meals. While that is good, it really wasn't enough. Our diet still had a lot of processed and packaged foods in it, and my husband's health was suffering.


He saw so many doctors, and was told over and over, "We don't know what's going on, but if Ibuprofen takes away your pain, just keep taking that." So he did, and that took a major toll on his stomach. We finally saw a doctor that took time with him, and worked with him to look at our lifestyle and diet and stress levels. This is when our diet completely changed. We cut out nearly all processed food, we still do some good quality crackers and chips or gluten free bread on occasion, but it is no longer a main part of our diet. We eat real, whole food, and he is doing so much better.


So, back to the pasta, I was bummed that it had to go....but then last year I tried sweet potato noodles! I know, sounds weird, but they are so good. We all love it, even the kids ask for seconds!


Grain Free Pasta with Sausage and Kale


3 large sweet potatoes spiralized (you will need a spiralizer)

1 lb sausage (Italian Seasoned or make your own)

3 cloves garlic (minced) 1 bunch of green kale

salt and pepper to taste


Directions:

Steam spiralized sweet potato until just tender (about 5 minutes). Meanwhile cook up the sausage and season with salt, pepper, and Italian seasoning or make your own (I just mix parsley, oregano, thyme, basil and marjoram). After sausage is cooked thoroughly, add in the kale, a little more salt and pepper, and continue to cook for 2-3 minutes, add in the garlic and cook for one more minute. Mix in the steamed sweet potato noodles and taste, add extra salt or pepper if needed. Top with red pepper flakes (if you like it spicy)!
