Happy first day of September, Fall is coming! I LOVE Summer, but Fall holds a special place in my heart. The changing leaves, the cool evenings, fog rising up over the fields in the morning, warm soups and drinks, and to top it all off, I can wear scarves and boots again!!! Fall also means it's time for pumpkin everything, especially pumpkin spice coffee.
When I first started drinking coffee, I needed ALL the cream and sugar in it. Likely because I didn't really like the taste of coffee, but really just wanted the delicious sugary flavors! Fast forward to twenty years later and I have grown in my love for coffee, so much so that I will even drink it black! However, come September...all of my favorite coffee shops start pushing their pumpkin spice lattes and nostalgia gets the best of me and I give in.
However, these drinks are usually loaded with sugar. So, a few years back, I started experimenting with making my own version of pumpkin spice creamer and lattes with left over pumpkin (because no recipes ever call for an entire can of pumpkin). I realized that it's actually super easy to make and even more tasty. The beauty of making your own is that you can control the sweetness and spices to make it just how you like it!
You can use this recipe as a creamer for coffee or even as flavor for your latte, just add a 1/4 cup or so to your milk.
Homemade Pumpkin Spice Creamer
1 cup heavy cream
2 tbsp pumpkin puree
2 tbsp real maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1 tsp vanilla
Add all ingredients, except vanilla, to a small saucepan on medium-low heat and whisk ingredients together for just a couple of minutes. Heat through until all ingredients are incorporated, don't bring to a boil. Remove from heat and add vanilla.
Store in refrigerator for up to one week, shake or stir before using. Enjoy!!
