I look forward to the lavender season ALL year long. I love everything about this beautifully scented therapeutic herb. I love the buzzing of bees, feasting on the lavender nectar throughout the day. I love the variations of purple in the different varieties of flowers. But mostly, I love harvesting the flowers for use in homemade salves, teas, and in the kitchen.
One of my favorite ways to use lavender in the kitchen is to make a lavender simple syrup. I use this to make homemade lavender soda, or as a mixer for the perfect Summer cocktail.
This soda is simple and made with honey, dried of fresh lavender flowers, water, and sparkling water.
Lavender Soda
½ cup lavender flowers
½ cup honey (more or less depending on how sweet you like it)
2 cups water
In a medium saucepan, place all ingredients in a pan, and simmer for 15 minutes. Strain and let cool. Pour ¼ cup into a 16 ounce glass and fill the rest with sparkling water.
*Variations*
Lavender Ginger Soda
- Add in 1 tsp ginger root with all ingredients before simmering
Lavender Vanilla Soda
- Add in 1 tsp vanilla after simmering all of the other ingredients
Lavender Blackberry Soday
- Add in 3-4 fresh or frozen blackberries into each individual glass
