The time is here! We are back to school this week, and I am sharing with you some of my favorite fast and healthy breakfast ideas for busy school mornings.
Breakfast is a chance to start the day strong, to eat a balanced meal so that our kiddos can have the energy and stamina to learn and play all day long! Sugary cereal (as delicious as it is) leads to blood sugar spikes and crashes, and leaves our children lacking energy and feeling hungry long before the lunch bell rings.
Here are some of my favorite meals to serve my kids and start their day strong!
Overnight Oats
Overnight oats are delicious and quick, with minimal clean up (my kind of busy morning breakfast). You can cut up fruit the night before, and have all of the toppings ready to be sprinkled on top of the oat mixture in the morning.
1 cup old-fashioned oats
2 cups milk or any plant based milk
¼ cup chia seeds
Mix ingredients together and store in fridge overnight. Give it a quick stir in the morning and top with fresh fruit, nuts/seeds, and coconut flakes. Enjoy!
Mini Frittatas
So good, and with minimal prep work, you can have a nourishing breakfast on hand for busy mornings!
8 large eggs
½ cup chopped greens (spinach, chard, kale)
½ tsp salt
¼ tsp pepper
â…“ cup shredded cheese
½ cup diced ham, bacon, or sausage
Mix together and pour into greased muffin tin. Bake at 375 degrees for 10 minutes or until center of the frittata is set.
Protein-Packed Smoothie
Everyone loves a good smoothie!! Make it a balanced meal, by adding nutrient dense ingredients for a nourishing breakfast!
1 banana
½ cup greens (spinach, chard, kale)
2 tbsp almond or peanut butter
½ cup berries
1 cup full fat yogurt
1 tbsp chia seeds
1 tbsp hemp seeds
½ cup coconut milk
Whole Milk Yogurt Topped with Homemade Granola
A favorite at our house! It’s easy and a much more nutritious option for cold cereal.
Hard-Boiled Eggs
The humble hard-boiled egg is a quick and nutritious breakfast, pair it with some fresh fruit and you have yourself a fast and filling breakfast!
