I know mornings are busy and some days there is barely time to breathe, let alone make a big breakfast. However, starting your day off strong with a nutrient-dense breakfast can make a huge difference in your energy levels.
These Mini Frittatas can be made ahead of time and heated up each morning, or you can mix it up and bake them up in about 15 minutes. If I'm making them in the morning, I like to have everything ready to go (the greens chopped, bacon or sausage cooked), so that all i have to do is crack some eggs, mix in some filling and bake!
They can be stored in the fridge for up to five days in an airtight container.
Also, you can play with the fillings and try different veggie, meat, or cheese combinations.
Mini Frittatas
8 large eggs
½ cup chopped greens (spinach, chard, kale)
½ tsp salt
¼ tsp pepper
â…“ cup shredded cheese
½ cup diced ham, bacon, or sausage
Mix together and pour into greased muffin tin. Fill about 3/4 of the way full, because they will expand. Bake at 375 degrees for 15 minutes or until center of the frittata is set.
