Pumpkin Spice Granola

I'm not quite sure what the absolute BEST part of Fall is. I love the crispness in the air, the bright colors, and the newness a change in season brings. I also cannot get enough of the warming spices of Fall. The aromas of cinnamon, nutmeg, ginger, and cloves are some of my favorite scents!


If you love these spices too, this granola will not disappoint. It's a perfect make-ahead breakfast as we transition from lazy Summer days, to busier Fall and Winter days. It's delicious topper for your yogurt, or can be eaten as a nourishing cereal replacement with milk.


Sometimes I saute apples in butter and cinnamon, and sprinkle this granola over the top for a healthy dessert!

Pumpkin Spice Granola



Ingredients


4 cups rolled oats

1 cup raw pumpkin seeds

1 cup walnuts or pecans

1 cup unsweetened coconut flakes

½ tsp sea salt

1 tsp cinnamon

1 tsp pumpkin pie spice

½ cup maple syrup

½ cup olive or coconut oil

½ cup pumpkin puree

1 tsp vanilla extract


Preparation


Preheat oven to 325 degrees

Mix the oats, nuts, seeds, coconut, and spices in a large bowl.

Whisk together pumpkin puree, oil, and maple syrup in a small saucepan on low-medium heat, until warm. Remove from heat and whisk in vanilla.

Pour the wet ingredients into the large bowl and mix all of the ingredients together.

Spread evenly into one or two baking sheets (lined with parchment).

Cook for 20-30 minutes, or until granola is golden brown.

Remove from oven and let it cool completely before mixing or transferring it to an airtight container.
