Oh, sweet granola, how I love you!
Yogurt is just not the same without a handful of granola on top. Add a crunchy topping to your smoothie with a generous sprinkle of granola. It's also a fantastic topping for ice cream!!
In our house, we most often use it as a replacement for cold cereal. I make two or three batches a month, and change it up a bit depending on the seasons, or whatever nuts or seeds I have in the house. There are a lot of recipes out there for homemade granola, I like this one because it is so easily adaptable and pretty low in sugar.
I have used this recipe for years, and passed it along to many friends. It is a favorite and really very simple to make.
Healthy Granola
5 cups old-fashioned rolled oats
2 cups chopped nuts your choice (almonds, walnuts, hazelnuts, cashews....)
1 cup raw sunflower or pumpkin seeds
1 cup chopped dried fruit of choice
1 cup unsweetened coconut
Mix all of these ingredients in a very large bowl. In another bowl whisk together:
1/3 cup honey or maple syrup (or both) 1/2 cup extra virgin olive oil or coconut oil (melted) 1/2 tsp salt
2 tsp cinnamon
1 tsp vanilla
Whisk these ingredients together until thoroughly mixed. Pour into the dry ingredients and stir until it's completely mixed in. Spread into a large baking pan and bake at 225 for 2 hours. I check mine every 30 minutes or so to stir and taste test to make sure it doesn't get overdone. About 20 minutes before taking the granola out of the oven, stir in one cup of dried fruit, if you want.
